Protein Packed Cookies

You read correctly, high protein cookies are the newest food in my life.

I picked up peanut flour a few weeks ago from Trader Joe’s not really knowing what to do with it. I added spoonfuls into oatmeal but never got much  more creative than that. I had a strong desire to bake chocolate chip cookies over the weekend. My faithful Bob’s Red Mill gluten free mix was waiting for me. But my thoughts turned back to the barely touched bag of peanut flour, and protein cookies were born. Peanut flour packs a huge punch with 1/4 cup having 110 calories and 16g of protein! I made these cookies about the size of a silver dollar, knowing that I would only need a bite to feel satisfied.

Peanut Flour Chocolate Chip Cookies (Adapted from Itzy’s Kitchen)

  • 1 cup peanut flour
  • ½ cup whole wheat flour
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • 2/3 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/3 cup chocolate chips

Directions:

1. Preheat oven to 375 F.
2. In a large bowl, mix the two flours, baking powder and soda together. In a separate bowl, mix together the sugar, oil, vanilla and eggs.
3. Add the wet ingredients to the flour mixture, and mix to combine. Add in the chocolate chips
4. Place spoonfuls on a parchment lined cookie sheet about 1 inch apart.
5. Bake for 11-13 minutes.
6. Allow cookies to cool on a rack.

The cookies are a bit dry for my liking, and I think that the next time I try making them I would add in extra peanut butter. These have been a great snack while running between work and class. Plus, who doesn’t like a little chocolate in their day?

I just picked up a bag of that peanut flour last weekend. I have yet to do anything with it so I’m loving this idea! Have you tried it in anything else??

I JUST made chocolate chip cookies with peanut flour too! The only difference is that I used ONLY peanut flour…They actually turned out quite tasty! I can send you the recipe if you want!

And yes, we need to catch up! Lauren and I were talking about doing dinner or happy hour with you sometime soon…Sound good? :-)

Yum! I need to make the big trip to Trader Joe’s to get some peanut flour. This recipe has me convinced that it should be a new pantry staple.

My husband would love these. I’m not a big fan of peanut butter cookies, but he’s crazy about them. The Hershey kiss cookies that are all over during the holidays are his favorite. I’m totally saving this recipe.

Oh my goodness! I’ve seen recipes for protien laden cookies before, but they always looked like little unappetizing lumps. But these look delicious!!! I’m so trying this recipe this weekend! I’m not an expert cook: how much peanut butter would you add to make them a bit more moist?

These look really REALLY good! I love that you made them bite-sized. Sounds like the perfect treat! I really think these would be my new favorite snack (and running “fuel” :) )

Cookies are amazing on their own. Add the fact the’yre high protein and you have the perfect little treat. Oh, and you’re right..everybody loves chocolate in their day! Especially if it’s mixed with peanut butter :)

Those look fantastic! I’m so annoyed because I can’t seem to find peanut flour ANYWHERE. Is it only at Trader Joes? I hope not because we don’t have those in Canada.

Holy deliciousness!! I soooo wish I could find peanut butter flour. I’m sure it would become my newest addicition! Way to have self control with those little boogers……I’d probably eat the whole batch!!

Those look so good! Even though they’re a lil’ dry, peanut butter and chocolate things are always tasty.

I keep seeing the peanut flour at TJ’s but I’ve been too scared to pick it up! I need to start learning how to bake, especially if baking could include PB and Chocolate. :)
