I don’t know what came over me but I had a really strong desire to try making chia pudding on Monday. Perhaps it was in an attempt to distract myself from studying for my last final of Summer I (yes, there is a Summer II) or that I knew I would need an extra satisfying treat after completing the final I was in refusal to study for. Or maybe both? Either way, this desire led me to a pretty ingenious recipe. I can’t remember where I found the original, but this was a dump and guess stroke of genius.
Chai Chia Pudding (serves 1)
- 2 tbsp raw chia seeds
- 1 tsp cinnamon
- 1/2 tsp garam masala
- 2 tsp honey
- 1/2 tsp vanilla
- 2/3 cup almond milk (I used slightly more due to poor measuring skills)
Combine all ingredients in a container with a lid. Shake vigorously for stress relief to combine. Refrigerate for several hours, preferably over night. Top with sliced almonds and raisins, optional but highly recommended.
So so good. It is remarkably like a chai latte from Starbucks, but less expensive and more nutritious. I think this is going to become my new favorite comfort food, it’s impossible to feel stressed while eating this. There is going to be a lot more chai pudding in my life, so long as I can remember to make it ahead of time and enlist self-control while it sets.

oh yummm this does look good. i have a giant bag of chias and only ever use them in oats/smoothies so this recipe would be a very nice switch! and i do love chai
