I’ve gone a little chia crazy recently. I wish I would have hopped on the chia train sooner because chia pudding has been an incredible summer snack. I recently had a lecture about woman’s sport nutrition that made me realize I need to start eating something immediately after running and lifting. The professor talked about how a small cone from Dairy Queen has the appropriate ratio of protein to fat, but I don’t have a Dairy Queen near me, nor do I feel great on dairy. But chia pudding has a similar ratio and is something that doesn’t bother my stomach.
Vanilla Ginger Chia Pudding
- 2 tbsp chia
- 2/3 cup almond milk
- 1 tsp grated ginger
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 2 tsp honey
Mix all ingredients in a container, give a good shake and refrigerate for at least 8 hours. Top with fresh fruit (I used blackberries) and nuts (sliced almonds). I love the fresh ginger flavor and would definitely add more the next time I make it.

I’ve never eaten chia as a “pudding” but I love chia in any possible way. It’s so awesome!! Have you heard of/tried Salba? It’s kind of like chia, but has a sliiiight taste to it. It’s really good in cereal too
That looks gorgeous + adventuresome. I’d love to try chia sometime. I keep seeing it in blogs, but I’m not sure where to find it. Any tips???
