Single Girl’s Nectarine Crisp

There are perks to being single, like not having to share your dessert.

I never really understood dessert sharing. I guess it’s okay after a big dinner out. But sharing ice cream or birthday cake or cookies? No way. The only tiny troubling part about being a party of one is cutting down recipes. Sure I could eat an entire cake, but it’s probably not a smart idea. Considering that I still have scones to eat, I needed to make my dessert personal sized.

I’ve been craving peach pie like nothing else. But peaches are apparently still not in season in Virginia or cost $4/lb. There is no point to buying something that is still green and hard as a baseball. Nectarines are a different story.

Nectarine Crisp

  • 2 nectarines, thinly sliced
  • ~1 tsp sugar
  • ~2 tsp flour
  • ~1/3 cup oats
  • ~1 tsp brown sugar
  • ~1/4 tsp cinnamon
  • ~1/2 tbsp butter

Obviously I didn’t really feel like measuring. Lightly toss the nectarine slices in 1 tsp flour and the sugar to coat. Layer in a baking dish. Mix the remaining flour with oats, brown sugar, cinnamon and butter. Use your fingers to combine and pile on top of the peaches. Bake for 25 minutes at 350F or until the nectarines are bubbling.

If you eyes are larger than your stomach (like me) or you’re just a nice person and have decided to share, this is particularly good with a dollop of vanilla greek yogurt.

Let it be a note to my future husband, I’m not interested in sharing my dessert.

gotta love any recipe with the word’s “single girl” in it! hehe. it looks delicious and i love all the ingredients. great way of using in season fruit!

What a fabulous summer fruit recipe! I could certainly use something like this. Normally I make full size desserts and have a very hard time not wanting to eat the whole thing! :)

Haha! My husband had to learn the hard way that I’m not much of a sharer when it comes to certain things… like pizza. ;) He has his half and I have my half and it just keeps anyone from getting hurt. :P
