I like kale. Especially spicy kale chips. But I’ve struggled to find a way that I can eat it raw. Salads that look like a Crayola box make everything taste better.
{Colorful} Kale Slaw
- 3 stems of kale, shredded
- 1/4 cup chopped carrots
- 1/4 cup red cabbage, shredded
- 2 tablespoons roasted cashews
- 1/4 avocado, sliced
- 1 lime wedge
- 2 tablespoons ginger salad dressing
On a plate, layer kale, carrots, and cabbage. Top with cashews and avocado slices. Dress with freshly squeezed lime juice and ginger salad dressing.
Doesn’t get much simpler, or colorful, than that. Is anyone else obsessed with the salad dressing served in sushi restaurants? Because I’m kind of in love with this ginger dressing. I’ll take my dressing with a side of vegetables.

I love kale chips but have never had kale be itself. It seems like it would be bitter..but I’ll have to give it a try!
It’s a lot like spinach to me. Just give it some time to soak in whatever dressing you use, that makes it more mild and less tough.
I’ve seen so much about kale on blogs but never have actually tried it, in raw or chip form! Maybe I should try the WF brand of kale chips before attempting to make them myself- I fear that they’d come out awful and I’d be turned away from kale… What’s the texture like when eaten raw? It looks kinda tough?!
I actually like sauteed kale more than the chips. Eating it raw can be tough, but if you massage it in a teaspoon or so of olive oil it definitely makes it more tender. Even just mixing it with an oil based dressing and allowing it to sit for a few minutes will makes it more palatable.
